料理と文化で世界の注目を浴びる中国・成都の双流

【成都（中国）2018年11月29日新華社＝共同通信JBN】2018年9月20日、World Federation of Chinese Catering Industry（世界中餐業連合会）が主催し、成都市双流区経済局が後援する第1回World Sichuan Cuisine Conference（WSCC、世界四川料理カンファレンス）が成都市双流区で開幕した。「Let the World Love Sichuan Cuisine（世界に四川料理を）」をテーマとするWSCCには、産業団体、四川料理企業、15カ国・地域からの様々なメディアの500人余りが結集した。参加者は四川料理の基準、ブランド開発、世界進出戦略について意見交換した。

第1回WSCCが双流で開催されたのは、空港地区としての優れた立地、堅固な基盤、四川料理業界が発展する勢いのおかげである。

▽双流フレーバーの世界進出

双流のさまざまな農・副産品の中でも「双流冬イチゴ」「双流二荊条辣椒」「双流永安ブドウ」は「中国地理的表示保護産品」になり、双流農産品の豊かで優れた品質を証明している。「双流フレーバー」を代表できるのはどの産品か。その答えは「双流二荊条辣椒」である。四川料理の体系全体にとって、シェンリ町ムマ山産出の「双流二荊条辣椒」は、本物の四川料理を作るために不可欠の食材である。唐辛子を使うどの料理にも、「二荊条辣椒」は最高品質にとって最良の選択である。

2017年3月、双流区の成都空港経済デモンストレーションゾーンが承認され、地区の航空物流産業への支援を大幅に拡充した。双流は現在、標準収納施設3.8平方キロの拠点になっており、このうち70万平方メートルが稼働中で、UPS、DHLなど世界の物流企業トップ100社中13社が進出している。また、成都農産品センター卸売市場のeコマース育成パークは主にネットワーク事業に関わり、eコマースサービスを立ち上げた。

巨大な市場スペース、設備の整った物流・輸送システムによって、双流の高品質農・副産品は世界市場に出荷されている。双流二荊条辣椒は2017年、中国農産品として初めて米ニューヨークのタイムズスクエアに出品された。

二荊条辣椒の世界販売は双流に年間1億6500万元の生産額をもたらした。その結果、双流は津々浦々に知られ、多くの人がこの地を訪れる考えを抱くようになった。

現在、四川料理を目的にますます多くのビジターが双流にやって来て、最も本格的な四川料理を味わいたいと願っている。四川の地元住民の間には、「There is no problem that cannot be solved by a meal of hot pot. Otherwise, two meals of hot pot will work」（火鍋料理一品で解決できない問題はない。さもなければ、火鍋料理二品が解決する）という有名なことわざがある。担々麺、薄切豚肉ニンニクソースかけ、回鍋肉などおいしい四川料理は数々あるが、人々の間では火鍋料理の人気が高くなっており、それは楽観的、調和的、開放的なトーンも帯びている。双流はまた、独特の風味がある火鍋料理を楽しめるところでもある。

WSCC期間中の2018年Global Competition of Sichuan Hotpot（四川火鍋料理国際コンペ）では、双流の地元ケータリング企業Shengshi Kirin Restaurant Management Co., Ltdが「International Famous Hot Pot（国際著名火鍋）」に選ばれた。傘下のKirin Pangge Hotpotは1995年に開店し、そのスープベースは食事客の評判になった。スープベースは明るい赤色をしており、新鮮で味がよく、スパイシーさと辛味のバランスがとれている。さらに、スープの唐辛子と四川山椒は乾燥度が最も低くなっている。過去20年余り、Kirin Panggeは双流火鍋の代表になり、そのスープベース製品は米国、スペイン、カナダ、その他の諸国に達して、双流フレーバーを世界に届けている。

▽外国人観光客は独特な文化的魅力を味わうため双流に

双流農産品の世界進出を可能にする一方、ここの空港産業も双流に対する世界の認知度を高め、独特な文化的魅力を味わう多数の外国人ビジターを集めている。成都双流国際空港は2017年、離着陸の3万400便で4980万2000人の旅行を扱った。このうち539万8600人はインバウンドだった。膨大な乗客の流れは豊かな観光資源を意味している。双流の革新的な観光発展により、四川省に来る際に主要目的地として双流を選ぶ観光客が増加している。

双流の呼び物のうち、2000年以上の歴史がある黄龙溪古镇は最も人気が高いものの1つである。三国時代の歴史の豊かさ、絵のように美しい風景、西四川料理、西四川現地の習慣を求めて、ここには観光客が絶え間なく押し寄せる。2018年のドラゴンボート・フェスティバル期間中、黄龙溪古镇には21万7000人が訪れ、2657万元の収益を生み出した。今年の国慶節にこの町は46万8000人を迎えた。成都市内で錦里歩行街、チャイナレーンに次ぐ3位の人数である。

双流のもう1つの景勝地は輝南にある老茶館で、BBCとガーディアン紙は「中国で唯一無二の保存状態のよい老茶館」と報じた。観光客はこの老茶館で、変化の速い現代世界における双流住民のスローライフや歴史遺産、名高い文化を間近に見ることができる。

このようにして、開放的な双流はその文化と料理を世界の隅々まで広げている。双流が将来、料理と風景で魅力的な場所だけでなく、空港を基盤とする熱気と魔力のある庭園風都市としても記憶されることは間違いない。

On September 20, 2018, the 1st World Sichuan Cuisine Conference (WSCC),

organized by the World Federation of Chinese Catering Industry and supported by

the Business Bureau of Shuangliu District, Chengdu, was opened in Shuangliu

District, Chengdu. With theme "Let the World Love Sichuan Cuisine", the WSCC

brought together 500-plus attendees of industrial organizations, Sichuan

cuisine enterprises, and varied media from 15 countries and regions. They

exchanged ideas on the standard, brand development, and going global strategy

of Sichuan cuisine.

That the first session of WSCC was held in Shuangliu should be attributed to

the prime location of Shuangliu as an airport district and its sound foundation

and strong momentum in developing Sichuan cuisine industry.

Shuangliu Flavor Going Global

Among the various agricultural and sideline products in Shuangliu, "Shuangliu

winter strawberry", "Shuangliu Two Vitex Chili", and "Shuangliu Yong'an grape"

have become "China Protected Geographical Indication Products", which testifies

to the richness and superb quality of Shuangliu agricultural products.

You might wonder that which product can best represent "Shuangliu Flavor". The

answer is the "Shuangliu Two Vitex Chili". For the whole Sichuan cuisine

system, "Shuangliu Two Vitex Chili", which originates in Muma Mountain, Shengli

Town, is an indispensable food material in making authentic Sichuan food. To

quality agricultural and sideline products in Shuangliu are being shipped to

global market. In 2017, Shuangliu Two Vitex Chili made it to Times Square, New

York, the US, becoming the first Chinese agricultural product that had done so.

The global sales of Two Vitex Chili has brought more than RMB 165 million

output value each year for Shuangliu. As a result, Shuangliu has become well

known far and wide and many people cherish the idea of visiting here.

Today, a growing number of visitors come to Shuangliu for the sake of Sichuan

cuisine, where they hope to taste the most authentic Sichuan food. There is a

popular saying among Sichuan locals, "There is no problem that cannot be solved

by a meal of hot pot. Otherwise, two meals of hot pot will work." Among various

kinds of palatable Sichuan food, such as Dan Dan Noodles, Shredded Pork with

Garlic Sauce, and Twice-cooked Pork, hot pot is a unique offering highly

popular among people, and also bears optimistic, harmonious, and inclusive

tone. Shuangliu is also a place where you can enjoy hot pot with distinctive

flavor. In the Global Competition of Sichuan Hotpot 2018 during the WSCC,

Shengshi Kirin Restaurant Management Co., Ltd, a local catering business in

Shuangliu, was honored as "International Famous Hot Pot". Under its umbrella,

Kirin Pangge Hotpot was founded in 1995, and is well received among diners for

its base soup, which is red, bright-colored, fresh and tasty, and has

well-balanced spicy and hot flavor. What's more, the soup has a minimum dryness

of chili pepper and Sichuan pepper. Over the past 20-plus years, Kirin Pangge

has become a flagship of Shuangliu hot pot. Its base soup products have reached

to the US, Spain, Canada, and other countries, bringing Shuangliu flavor

worldwide.

Foreign Tourists Coming to Shuangliu to Taste Unique Cultural Charm

While enabling the going global of Shuangliu agricultural products, the airport

industry here has also made the world better know Shuangliu and is bringing

hordes of foreign visitors to taste its unique cultural charm. In 2017, Chengdu

Shuangliu International Airport handled 49.802 million trips with 30,400

inbound and outbound flights, including 5.3986 million of inbound trips. The

huge passenger flow means abundant tourist resources. With the innovative

tourism development in Shuangliu, an increasingly number of tourists have

chosen Shuangliu as their major destination when they come to Sichuan.

Among the many attractions in Shuangliu, Huanglongxi Ancient Town with

2,000-plus year's history is among the most popular. Endless stream of tourists

come here for the historical richness of the Three Kingdoms Period, picturesque

landscape, food of western Sichuan style, and local customs of western Sichuan.

During the Dragon Boat Festival in 2018, Huanglongxi Ancient Town received 217

thousand arrivals, registering revenue RMB 26.57 million. During the National

Day holiday this year, the town welcomed 468 thousand arrivals, second only to

Jinli Street and China Lane in Chengdu and ranking No. 3.

Another popular scenic spot in Shuangliu is the Old Teahouse in Pengzhen Town,

reported by BBC and the Guardian as "the one and only well-preserved old

teahouse in China". In the Old Teahouse, tourists can have a close look at the

slow life of Shuangliu locals in the fast-changing modern world, as well as

historical heritage and splendid culture.

In this way, the open and inclusive Shuangliu is spreading its culture and food

to each corner of the world. We are confident that in the future, Shuangliu

will be remembered not only as a fascinating place of delicacies and sceneries,

but also an airport-based garden-like city with enthusiasm and charm.
